Instructions

pan: cook in a saucepan on a medium heat stirring often until heated through.

waste hack: leftover mince can be topped on pizza or on a salad.

serves 2 people.

what you’ll need:

100g noodles (udon or flat noodles are best)
50g symplicity cumin ‘lamb’ mince
50g diced cucumber
1 red chilli sliced
chilli or sesame oil
handful of coriander

method:

  1. bring a saucepan of water to the boil and add your choice of noodles.
  2. once the noodles are cooked through, run under cold water (so they don’t overcook) drain and set aside.
  3. heat the chilli or sesame oil in a pan and add the ‘lamb’ mince, stir often to avoid catching.
  4. once mince is heated through add the noodles and toss – add more oil if needed.
  5. take the pan off the heat and toss the cucumber through.
  6. serve with a good dose of sliced chilli and coriander topping.

serves 2 people.

what you’ll need:

2x flat bread
100g cumin mince
half a red onion sliced
100ml plant based yogurt
2 tsp sumac
half a lemon
olive oil

method:

  1. in a bowl gently mix the yoghurt and sumac, set aside.
  2. top the flat breads evenly with the ‘lamb’ mince and a few slices of onion.
  3. grill for 3-5 minutes until warmed through or toasted to your liking.
  4. serve topped with a dollop of yoghurt sauce, a squeeze of lemon and a drizzle of olive oil.
